This one was a huge hit. My husband is still talking about it. That, my friends, is a first & a victory! Whoop!
Garlic -3 cloves, peeled & sliced
1/2 medium white or yellow onion, sliced
1/2 c carrots, sliced
1/2 parsnip, sliced
2 stalks celery, sliced
1/2 celery root, dirty edges trimmed, sliced
1 tbsp coconut oil
Sautée above ingredients until opaque. Do not brown, just soften. About 15 minutes. (House should smell amazing). Add 1 c water. Bring to a boil. Turn heat down & let simmer. 20 minutes. Repeat process, at least once more. Honestly, the more times you do this, the richer the broth will be. I did this four times, which I think is why this was such a hit.
Next, stir in 2 c Kale ribbons. Let simmer until bright green. Transfer to blender or food processor & smooth. Add ground black pepper & a quality salt (I used pink Himalayan) to taste. Serve immediately.
