This was last nights meal. I’ve received lots of queries so here is the recipe:
3 cloves garlic, peeled & sliced
1/2 white onion, peeled & diced
1 medium sized celery root, nasty edges removed, diced
Sauté olive oil, 1 tbsp olive oil, garlic & onion until soft & opaque, about 15 minutes
Add 1 c water, bring to a boil, then simmer about 20 minutes
Repeat. I repeated about 4 times to create rich broth
Then add 1 1/2 c kale, stemmed & torn into pieces. Let simmer with soup until slightly tender and still vibrant green. No more than 3 minutes. Transfer to blender & process until smooth.
Meanwhile, grill some shrimp. This is my husbands job. He loves to manage the meat. Ha.
I also made an easy kale salad by using another 1 c of kale. I squeezed lemon over it, drizzled some olive oil on top & massaged it for 2 minutes. Another ha. Then I added a bit of organic shoyu.
