I felt the need for a vegetable excursion this evening. I’ve been eating more cheese than I like recently. It’s been cold. I’ve allowed myself more “comfort food” than I normally would, in terms of an occasional dip of queso and/or chips and salsa… stuff I don’t normally eat. As such, it seemed like a good idea to cleanse tonight, to eat vegetables and nothing but, and to make them savory, delectable and fully enjoyable. It was such a success, that I knew I had to share…
I’m calling this extravaganza: Kindness with Quinoa, as it’s often the kindest thing I can do for myself to eat purely.
Ingredients & preparation:
1 c Quinoa, rinsed & boiled for 15 minutes, layer as base of dish
1/2 c Broccoli, blanched with lemon squeezed on top
1 c Kale, stemmed, torn into ribbons, massaged with olive oil & lemon
Veggies sauteed in 1 Tbsp coconut oil:
1/2 White onion, sliced; 2 cloves Garlic, sliced; 1/2 Red bell pepper, diced; 3 slices of Portobello mushroom; 1/2 c of Garbanzo beans. Saute until soft, add on top of dish.
Top with fresh a dab of fresh jalapeno, diced
Sprinkle with Himalayan pink salt & fresh ground pepper
